I love bacon–but I’ve had to force myself to eat spinach!
When I reviewed the data, I was a bit surprised by this comparison as I thought spinach would perform higher than it did. That said, this is a closer call than many of our other 100 Grams Challenges.
Spinach won with vitamin C (obviously) and also with iron and folate. HOWEVER, keep in mind that the form of iron found in spinach is really not highly bio-available. When we see iron in animal foods, it's almost always the "heme iron" form which means it's highly absorbable for humans. On the other hand, heme iron in plant foods is mostly unabsorbable for humans.
